This weekend we are heading to Vegas to celebrate my hubby’s grandma’s birthday. It’s going to be a more laid back Vegas trip than I’ve done before, which I’m TOTALLY good with. In fact, the only thing I hope we can do is get back to China Poblano for a killer meal. China Poblano is located in the Cosmo Hotel and is the most unique restaurant concept I’ve ever experienced. I’m talking Mexican and Chinese food together at the same restaurant. Bizarre, but do you question Jose Andres and his brilliance, no. Never. And let me tell you this meal was brilliant, especially the standout star the 20 vegetable fried rice. I never knew fried rice could be so good. I’ve always loved it, but this was exceptional with deep umami flavors and pops of brightness from the veggies. So so good! Next time you’re in Vegas give it a try!
