Summer Hits

Every summer, without fail, I find myself mourning the end of the season before it has even come to a close. Here’s the thing…I am the most BAAASSSIC of basic fall loving – pumpkin spice everything – roast all the root veg – wear all the sweaters – bring on the changing leaves – bitches you will ever come across. I freaking love fall. But there is something about these last weeks of summer that marks the passing of time and it inevitably makes me a bit sad. Like life is slipping by and I’m not ready for these moments to end. The good news about those feelings is it keeps me very present and in the moment; desperately soaking up any and every last ray of sunshine the Pacific Northwest is willing to gift us. With all that in mind, here are a few summer hits keeping me focused on the sunny days we still have ahead.

TO EAT

I cannot for the life of me remember where I saw this non-recipe-recipe, but when I tell you it is a game changer, I’m not messing around. The best tomatoes you can find + browned butter + flaky salt. Perfection. That’s it. That’s the recipe. Gone are the days I reach for the olive oil with my best of season heirlooms. Brown butter it is forever and ever, amen.

Next up, this stone fruit + corn salad from What’s Gaby Cooking has been a peak summer staple for about 5 years now. A real crowd pleaser too. Also, I tried this new approach for cleaning corn from Julia Turshen and it totally works. Such a great hack!

In the thick of the 2020 pandemic summer I somehow stumbled upon Spotify playlists created by Jacey Duprie (Damsel in Dior) and they are SO GOOD! Just search for her profile on Spotify and click on her playlists. The Let’s Summer ’20 and Let’s Sail are particularly fun for late season al fresco evenings.

Here’s to soaking up every last moment of summer we have ahead.
