Grapefruit & Avocado Oatmeal

It’s a New Year and I am back to the blog after a long holiday break full of celebrations. I generally don’t do resolutions but I do like to use January as a kick off point for a healthy new year of clean eating and good lifestyle habits. If you have any interest in doing the same stay tuned throughout the month for some healthy habits and clean eating recipes. And since breakfast is the start of the day that’s exactly how we are going to start the new year, with a healthy breakfast. I’m going to need you to trust me on this and give it a try even if you think it’s weird. It is weird, I admit it. But it also happens to be out of this world delicious and stunningly beautiful.

Grapefruit Avocado Oatmeal
Oats
Cashews crushed into small pieces, I use a heaping 1/2 cup for every 2 cups dry oats but can be to your liking
Coconut Oil, 1 heaping tablespoon for 2 cups dry oats but can be to your liking
Pinch of Salt
Grapefruit, segmented into pieces
Ripe Avocado, cut into cubes
Almond Milk, or milk of choice
Shredded Coconut (optional)
Chia Seeds (optional)
Maple Syrup (optional)

Make plain oats according to package instructions, but make sure to add a tiny pinch of salt (it helps bring out the flavor) and coconut oil once it starts to cook down. You want to keep adding water until the oats aren’t absorbing it any more and it become nice and creamy in texture. Stir in crushed cashews and divide into bowls. Top with grapefruit, avocado, almond milk, a sprinkle of coconut, chia seeds and a drizzle of maple syrup. Holy moly you are going to LOVE it!
