Are you ready for some FOOTBALL?! Are you ready to…party?!!! Do you remember that song? My dad used to goof around with my sister and I while we sang that old school song on Sunday nights and danced around the house before the game started. Even as an adult I still find myself singing it here and there before the big game of the week and when the spirit really hits me I also like to treat my guy to some special grub…enter Seattle Dogs. Have you heard of them? I know it’s going to sound really strange to most people but let me tell you, in Seattle, this is a staple. You’ve got your dog + a thick spread of cream cheese + grilled onions + bun and the combo = the most amazing football food in the world. Oh and the absolute best part is they are fat, calorie, gluten, sugar, carb and dairy free!!!…in my wildest dreams. Definitely a splurge but very worth it.
SEATTLE DOGS
favorite high quality sausages (I used Applegate Chicken Feta & Spinach)
hot dog buns of your choice (OMG, these pretzel rolls were out of this world!)
cooking spray (optional)
cream cheese
two large onions
olive oil
salt
Start by taking the cream cheese out of the refrigerator to soften as you cook. Cut the onions in half and slice into thin half moon shaped pieces. Add onions to a cast iron skillet with 1-2 tablespoons of olive oil and give them a generous sprinkle of salt. Cook on medium low, only stirring occasionally, for 20-30 minutes while you prep the rest of your dinner. Now cut buns open and give a light spray of cooking spray to help crisp up on the grill (optional, can also grill them dry). Cook the sausages according to the package directions, mine came precooked so I just heated them on the grill pan and added some nice grill marks. Place the buns on the grill (or grill pan) with the inside facing down. Once the buns and sausages are cooked and nicely marked remove from the grill and add a very generous spread of cream cheese to one side of the bun. Top the cream cheese with grilled onions and finish with the sausage. Assembling them this way uses the cream cheese to prevent soggy buns. Enjoy and be prepared to have a new game day favorite.
